From our kitchen to yours

The base behind every Manjay plate, now in a jar.

Epis is the heart of Haitian cooking — a bright, garlicky green seasoning built fresh, never from a spice packet. Balilov is that same recipe from Manjay's kitchen, made in small batches so it tastes like it was blended this morning, because it was.

  • Fresh, not shelf-stable. Parsley, thyme, shallots, garlic, and peppers — no fillers, no shortcuts.
  • 1–2 tbsp per pound. Marinate, sauté, or finish — it's the base for rice, beans, meat, and seafood alike.
  • Keep it cold. Fresh-made and refrigerated — this isn't a pantry jar, it's a fridge staple.

Balilov is brand new: right now jars are made fresh in small batches and sold in-store at Manjay while we finish shelf-life testing for wider shipping. Online orders above are held for in-store pickup — local delivery and nationwide shipping are next.

How to use it

One jar, endless dinners.

1

Marinate

Rub 1–2 tablespoons per pound of chicken, fish, goat, or beef and let it sit — even 20 minutes builds real flavor.

2

Sauté

Start your rice, beans, or sauce by blooming a spoonful in hot oil before anything else hits the pan.

3

Finish

Stir a spoonful in at the end for a bright, garlicky lift — soups, stews, and grilled vegetables all take it well.

FAQ

Good to know

What's in it?+

Fresh herbs, garlic, peppers, citrus, oil, and spices — parsley, thyme, shallots, green onion, green pepper, and garlic form the base, blended with rice vinegar and canola oil. The Mild version adds seedless habanero.

How long does it keep?+

Keep it refrigerated at all times. Because Balilov is fresh-made with no preservatives, we recommend using it within a few weeks of purchase — check the date on your jar's lid.

Do you ship?+

Not yet — jars are sold fresh, in person, at our Miami locations while we complete shelf-life testing needed to ship safely. Order here to reserve jars for pickup, and join our list below to hear when shipping opens up.

How much do I use?+

Start with 1–2 tablespoons per pound of protein for a marinade, or a spoonful to start rice, beans, or a pot of soup. Mix well before each use.
